Vegan Carnitas Tacos

Ingredients:

⠀⠀⠀⠀⠀⠀⠀⠀⠀

  • 1 large can of jackfruit

  • 1 tbsp minced garlic

  • 2 tbsp liquid aminos, tamari or soy sauce

  • 1 tsp taco seasoning

  • 8-10 corn tortillas

  • 1 small purple onion

  • Cilantro

  • Salsa of choice

  • Lime wedges

Cook option:

⠀⠀⠀⠀⠀⠀⠀⠀⠀

1. Open can of jackfruit, drain and rinse. Shred jackfruit and dry with paper towels.

2. Turn pan on medium/high heat, add canola oil and garlic. Sauté for about 30 seconds.

3. Add jackfruit to the pan along with some taco seasoning and liquid aminos or tamari. Sauté for about 10-15 minutes until golden brown. Add little more oil if you need to.

4. Warm up tortillas on a skillet, dice onions and assemble your tacos.⠀⠀⠀⠀⠀⠀⠀⠀⠀

No cook option:

⠀⠀⠀⠀⠀⠀⠀⠀⠀

1. Open can of jackfruit, drain and rinse. Shred jackfruit and dry with paper towels.

2. Add liquid aminos/Tamari/soy sauce into a bowl along with diced onion, the juice of 1 large lime, taco seasoning and jackfruit. Mix it in so jackfruit is well marinated.

3. Marinate jackfruit for at least 1 hour or overnight for best results. Warm-up jackfruit in microwave for at least 1 minute before serving.

4. Warm-up tortillas in microwave for 15 seconds on each side and add jackfruit, cilantro and salsa.
